Roaster's Notes:
This coffee is what I would call a "classic" Ethiopian coffee. I believe if you haven't tried an Ethiopian, in a true medium roast format, this should be a nice delight. Dont' get me wrong, this coffee will be unusual than what you are routinely used to. It's bright, in your face, but mellows out into a chocolate aftertaste. It does get alot more pronounced as it cools down. Just like most coffees. But when it does cool down, you will want to continue to drink it because it gets more enjoyable in the mouth.
I would suggest first drinking this coffee as an immersion brew of your choice. Taste it a couple of times as the flavors are less evident. But as you keep exploring the coffee, your mind will come to appreciate the coffee even more as you try this coffee as a pourover. I would also suggest playing around with different water-to-coffee brewing ratios. Just play, have fun, this coffee will take you on a journey.
