Roaster's Notes:
Believe it or not, I'm still trying to figure out this coffee. Roasting it isn't an issue. Understanding the taste and flavors and how it works together as a brew has been challenging. I will attempt to brew this coffee as French Press. That may bring out some more, Central American notes that I'm used to. However, I think that is my problem. Thinking that it will taste similar to other coffees in the same country. This coffee reminds me of a combination of a South American coffee and an African one. So with the flavors of citric, chocolate, caramel an malt all coming in at different phases as it travels through the mouth, it's a hard one to pin down.
My suggest. Try to taste this coffee as blindly as possible. Taste it with other coffees. Just play and see what you can gather from the whole experience from this not-so-classic Guatemalan coffee.
