Don't get me wrong, organizations like the Specialty Coffee Association serve an important role in promoting sustainability and researching best practices. But I fear their cupping rules, roasting credentials, and ladders of certifications cause them to lose sight of the end consumer - you.


At the end of the day, no matter how esteemed the cupping score or roasting protocol, it means nothing if you don't actually enjoy drinking the coffee. Providing an experience that genuinely delights your palate and awakens your senses should be the top priority for any roaster worth their salt.
