Roaster's Notes:
Believe it or not, I'm still trying to figure out this coffee. Roasting it isn't an issue. Understanding the taste and flavors and how it works together as a brew has been challenging. I will attempt to brew this coffee as French Press. That may bring out some more, Central American notes that I'm used to. However, I think that is my problem. Thinking that it will taste similar to other coffees in the same country. This coffee reminds me of a combination of a South American coffee and an African one. So with the flavors of citric, chocolate, caramel an malt all coming in at different phases as it travels through the mouth, it's a hard one to pin down.
